Raw, Vegan, Chocolate Peppermint Brownies
Chocolate is always in season!
Why not treat yourself to some decadent raw vegan peppermint brownies and wow any friends and family who might be new to a raw vegan lifestyle.
1 1/2 cups almond flour
1 cup cacao powder
1/8 teaspoon nutmeg
pinch salt
Wet Ingredients:
1/2 cup maple syrup
1/2 teaspoon vanilla extract
1/4 water (if necessary)
3 drops Young Living Peppermint Essential oil
Instructions
1. Whisk together the dry ingredients. Separately, whisk together the wet ingredients.
2. Combine wet and dry ingredients in large bowl and mix with spatula. If mixture is too dry, add water as necessary. (You don’t want the mixture too wet, just wet enough so all the ingredients are fully incorporated).
3. Transfer mixture to brownie pan.
Peppermint Layer
¼ coconut milk
2 tablespoons coconut butter
1 cup cashews, soaked
1 packet Stevia
3 drops of peppermint essential oil
Blend all ingredients in high-speed blender until smooth & creamy. Add on top of brownies and place in fridge to set.
Chocolate Ganache Layer
1 cup maple syrup
1 cup cacao
1/3 cup coconut oil
1 teaspoon vanilla extract
pinch salt
Blend all ingredients in high-speed blender until smooth & creamy. Add on top of brownies and place in fridge to set. Garnish with dried coconut flakes and enjoy!
